UC Davis is excited to announce the addition of the Coffee Center - a 6,000 square foot roastery and laboratory space. The Center’s main goal is to do for coffee what UC Davis did for wine and beer: to become the leading source of scientific expertise in the study of coffee. 

Peet’s Coffee has provided a generous founding donation to support renovation of one of the high-bay labs in the Coffee Center to establish a pilot roastery. This first of its kind roastery in an academic setting will include industrial scale roasting capabilities, to perform cutting edge research and education on the physics and chemistry of roasting. 

The vision for the Coffee Center includes the following:

  • Experimental Green Bean Storage Facility

  • Advanced Cold Brew and Coffee Packaging Facility

  • Sensory and Cupping Laboratory

  • Advanced Coffee Analytical Laboratory

  • Espresso and Brewing Laboratory

  • Custom Water Quality Facility

  • Office, Classroom, Meeting, and Reception Space

The Coffee Center at UC Davis will work to improve the lives of millions by conducting interdisciplinary research focused on improving the quality, efficiency, and sustainability of specialty coffee. The Specialty Coffee Association has been deeply engaged with the UC Davis coffee center since its inception, and will partner with the center to support and guide cutting-edge coffee research for the benefit of the coffee community and everyone in it.
